Cheese made with raw milk selected exclusively from mountain milk. It belongs to the category of semi-cooked cheeses. Of cylindrical shape has a diameter of about 34/40 cm, bare height of 8/9 cm and weight of 9/11 kg.
The pasta comes with a straw yellow color elasticity and with a large diffused average eye. The pleasant and definitely aromatic taste makes it particularly suitable for both direct consumption and preparation of dishes, well-suited to the combination with polenta.
