In November, when the color ranges from green to purplish, the olives are harvested with agitators and trunk vibrator directly from the plant, so as to respect the integrity of the fruit, and are arranged in small perforated crates, thus avoiding dents and Skin damage, primary causes of early oxidation of the oil.
The olives, a few hours after harvesting – on average after 12 hours – arrive at the fresh and healthy crusher, an essential condition for a fruity oil with a characteristic olive flavor.
