Also for our Chianti Colli Senesi Riserva, only native vines are used: 85% of Sangiovese is complemented by Colorino, Canaiolo, Ciliegiolo, Mammolo, Round Leaf specially selected during harvest. The fermentations are carried out in a traditional manner with delestage and replenishment and are followed by prolonged macerations that allow to extract the best tannins from grapevines, and polyphenols and anthocyanins from the skins. At the end of the fermentation, the mixture is blended and cured in large barrels for 36-40 months followed by bottling and bottled aging of 6-12 months.
Clarification of the wine occurs naturally without the use of chemicals, so there are very natural wines that do not have components that can give you allergies. Choosing to use only natural processes can lead to a small solid deposit in the bottle, which is formed with aging. This is a sign of product’s naturalness, and also a sign of how much wine is still “alive” in the bottle and continues its evolution, giving great satisfaction with aging.
The Chianti Colli Senesi Reserve of Campochiarenti is presented with a round and soft body, accompanied by a structure that guarantees a remarkable longevity.
