The pressed grapes are placed in containers for traditional red vinification. The subsequent maceration phase is carefully controlled to extract fragrances, intense colour and to limit the presence of tannins. Conserving the must in low-temperature controlled tanks maintains the intense and delicate aroma of the grapes. The foam formation, starting directly from the must, takes place in the autoclave at a consistent low temperature to bring out the characteristics of the basic wine.
